In 2010, the trace element zinc was measured to examine how much is released after chewing.
Three other commercial gums were also tested. Chios Mastic gum or commercial gums were chewed for 1–4 hours, and zinc content was estimated. Chios Mastic was compared to other natural resins of the same genus (Pistacia terebinthus L.) or conifer (Pinus halepensis Mill.), which have different secretion mechanisms and are used as food additives.
Zinc content in the resin was lower than in plant tissues. Chios Mastic had slightly higher zinc concentration than the other samples and released about 0.7 mg/kg zinc in the mouth and gastrointestinal system after 4 hours. Commercial gums released more zinc (up to 2 mg/kg), likely due to uptake from saliva, which may reduce zinc availability for the body.
