Every summer the resin oozes from incisions in the tree bark and hardens in the air into characteristic drops – tears. Start with a smaller piece
Place one or two tears in your mouth. At first, the mastic is harder and tastes slightly bitter – this is normal.
Let it soften
Once warmed in the mouth, the mastic softens and releases its characteristic resinous aroma and flavour.
Combine the pieces
If it is too hard, add a softer piece. If it is too soft, add a harder one. Each piece is a little different.
Cooking and Baking
