The exuding resin is collected from the trees, branches and the ground beneath them — all by hand. The growing cycle usually runs from May to September, when farmers in the Greek mastic villages carefully score the bark and let the mastic seep out.

Cleaning

The harvested mastic is then sorted (by size) and cleaned to remove dirt and other unwanted matter.

Drying

The cleaned mastic is dried in a special room to remove residual moisture and ensure a long shelf life.

Grinding and processing

The dried mastic can be processed further — usually ground into a fine powder, or kept in small pieces. The tears are sorted by size and packaged for distribution. Larger crystals are usually chewed; smaller ones are used as an ingredient in food (for example as a spice).
