Mastic gum is a unique natural resin obtained from the mastic tree (Pistacia lentiscus var. Chia), which grows exclusively in the south of the Greek island of Chios. Every summer the resin oozes from incisions in the tree bark and hardens in the air into characteristic drops – tears. The millennia-old tradition of harvesting and processing has been inscribed on the UNESCO list since 2023.

Start with a smaller piece
Place one or two tears in your mouth. At first, the mastic is harder and tastes slightly bitter – this is normal.
Let it soften
Once warmed in the mouth, the mastic softens and releases its characteristic resinous aroma and flavour.
Combine the pieces
If it is too hard, add a softer piece. If it is too soft, add a harder one. Each piece is a little different.
Cooking and Baking
Grind the tears into a fine powder (ideally with a little icing sugar so they don't stick together) and add to recipes. Mastic gum gives desserts, baked goods, sauces and drinks a unique Mediterranean note. Small tears are especially well suited for powder thanks to their smaller size.

How can I tell whether the mastic gum is genuine?

How is mastic gum obtained?
The resin flows from incisions in the bark of the mastic tree, runs down the trunk or drips onto the ground, where it hardens. Once hardened, it is collected by hand.
